My experience is in replacing the camera on a 2000 Holiday Rambler, and your situation may be different.
I think you will find that camera behind the glass cover is not adjustable. I removed the old camera from the housing (held in by massive amounts of caulk) and replaced with a new color camera mounted in the old housing...still only gives view of towed car. Also mounted a second camera on top of the old camera housing. I then ran two new cables down and under the coach and up to a new color monitor that had two video inputs. If you source parts from Ebay or Amazon, it is not that expensive.
When I did this install, I documented it with pictures on the IRV2 forum. Log into IRV2...select more..click files...find electrical section...select Rear View Cameras (2) & Monitor Install on page 3.
Note that you have to login to IRV2 to be able to download the file.
