You might also consider, if your kids are like mine, their days of doing much camping with you two are pretty much at an end. They go off to college, get their own life etc.
So if you plan to keep the rig long term, it might be best to consider what works best for the two of you, and make do in the mean time. Maybe a tent for the kids, or drive an additional car on the short trips.
We have a 24ft rear kitchen model, for the last 11 years and 60k miles. I sleep up top, DW on the broken down dinette, GD and dog on the couch.
I would not want a fixed bed and see no need for one. For us a 24ft, with a slide is the perfect compromise size.
