Last time I used a class "C", I used the space for storage of bulky, lightweight stuff like blankets, bedding, and clothing.
If not using it for sleeping space, consider installing a seat belt based cargo net, similar to what Coachmen rigs do. That way, you can use plastic tubs, and not have them eject if you hit a bump.
