Your style of travel is exactly what we did for 7 years in a Pleasure Way Excel, Ford based. You sound like perfect candidates for a true Class B RV. IMHO you don't need to mess with extra batteries or solar panels, you can get by in the evening on the house battery, then charge it up during the day driving around. We did not have a generator and didn't miss one. The main issue we had with our van was the shower, I used it occasionally but my wife didn't like it so we usually cleaned up in campground showers and got a hotel room every 7 to 10 days or so on an extended trip. In retrospect, I think this was a mistake, we should have used the RV shower more, many people do and your size is an advantage. Storage in a B+ is probably less than it was in our PW. Good luck!
