Some TV's were used exactly that way. Some of the Safari coaches actually switched automatically to the back up camera when the coach was put in reverse. They were not set up to monitor the rear camera all of the time when driving down the road but when you got somewhere where you were going to back up, the TV would come on and you had a large view of what the camera was seeing while you backed up.
You should be able to take the one coax from the camera and plug that in to any 12 volt monitor that can flip down from underneath a cabinet or where ever you want to mount it.
