A quick answer is that we were 3 adults and 2 dogs in a 38' for a year and a half and it worked out well. We were fully outfitted for boondocking but in the end, VERY rarely did. In the end, things will go differently than you envision. That is about the only thing you can count on.
A longer answer is that you are in the right place. Most everything I know about RVing came from RV.net. You need to haunt this place. An hour a day for the next 6 months is not too much preparation. You'll have to learn to ignore the in-fighting. Use a mental filter and most all the answers you need are here. I read "301 Ways to Make RV Travel Safer, Easier, and More Fun" cover to cover before starting out. It may be a bit dated now, I don't know. Others may have a better recommendation. IMHO, 100% of those who leave (or hate) RVing are ignorant, uniformed, unrealistic, inflexible and unprepared. Initially being here will be a large part of enjoying your new life.
