Since you are going to be living in it for extended periods of time, I would recommend you rent a couple first.
Rent one at the high end (36-40ft) and spend a long weekend in it. Have your wife do some full blown cooking in it.
Then rent one in the middle (30-35ft) and do the same.
Buy the size that works for you to live in. Then work with what you have.
As mentioned above, folks with large RVs say size is no problem, folks with smaller say it is. The truth is that it depends. If you are specific about what campground you stay at, then you very well might have issues. If you are open to staying in "a campground or RV park in the area", then it will rarely be a problem, if ever.
