Since you are in Texas at the current time, I'd suggest you obtain a Texas non-resident CCW permit. 31 different states will honor a Texas non-resident permit. If your Utah CCW was still valid, you'd only have 30 states that honor it.
The attached website offers a lot of really good information on the CCW topic. It will tell you the requirements for each state, and you can use the maps to determine which states offer reciprocity for other states with either resident or non-resident licenses.
