Is the overload indicator on the genny illuminated when the problem occurs? Do you have the means to measure the load on the genny when the problem occurs? It seems like the genny is unable to run the converter at full load for some reason. At the converter's max input current, a single genny is going to be running near the max continuous load; however, running with the two gennys in parallel should solve this. Is there any way to know if the gennys are truly running in parallel? If everything is dandy when plugged into the electrical grid, it's very hard to not see this as a genny problem. Any chance you could order a charge wizard pendant to be delivered somewhere along your travels? The pendant would give you the means to force the converter to run at a lower charge rate. Since you don't have the pendant to tell you what mode the converter is in, you could measure the charge voltage to determine that. I'm guessing that your problem only occurs when the converter is in boost mode.
