Have you looked at the floor plan for the model you referenced? If it is designed to sleep 5, that means it is usually designed to seat 5 belted passengers comfortably. Having unbelted passengers lying on the bed or sitting elsewhere (dinette) is a safety concern in the event of a crash. You didn't mention if your plan has slides or not. Often slides will limit the functionality of the floor plan when retracted. You cannot drive with the slides extended.
It's been a while since I looked at Chevys but in my day, the 350 was a small block engine with a lighter duty transmission than the big block engines. (454) I'm not saying it's going to be a problem for you, just a concern of mine if I was going to travel with higher loads.
