Our 31-footer is rated to sleep eight and it has that many belted positions. A 25 might "sleep" seven with some of them being small, but you'll have to be outside once everybody's up.
I wouldn't want a smaller engine than our 6.8V10. The 350/5.7 is marginal for a Class C. The newer 6.0 is a whole different animal with a lot more punch than 0.3 Liter would suggest. If you don't plan on a lot of driving in hills, let alone mountains, you could be OK. With a lot of grades to climb, I think you'd be disappointed.
One with the 454 would be the better choice. Or a Ford with the 460. We had a Class C with 460 and power was never a problem.
