Really, it all comes down to how many people you want to be able to sleep in the RV.
If you aren't camping with your kids anymore, then how likely is it that you will have guests camping with you? How likely is it that your kids will have kids and want to use your RV? :)
I'm sure other RVs are different, but our RV has beds in the back, the cab-over, and then the table makes into a bed. But the table is not long enough for an adult to sleep on - you would have to sleep "kitty corner" on it.
I also do not like beds that you have to set up and break down to have the space back during the day. I will do this in an emergency (like when we had a house full of girl scouts at Disney) but otherwise I don't want to have to convert living spaces to use them.
I agree with the poster that said that overhead space is great for storage also.
