Look at the Phoenix Cruiser 2351D. Unfortunately thislink shows a poor picture, but the basic concept appeals to us. We are currently looking into such a unit, but without the sofa and a dinette instead.
You make a good point regarding fresh water capacity. That's one of the reasons why I consider this RV as such a great small Class C -> take a look at all of it's tank capacities in such a small package ... and it can be ordered on the heavier duty E450 chassis, too:
