I hear this sound from my Fleetwood as well. But always when the transfer switch allows power to the RV. There is a series of clicks two or three. I think it's power hitting the surge guard and then when it allows power through to the coach electrical system. The fridge is on this wall in mine, so it could be this powering up.
I do hear it occasionally while camping too. My main and auxillary switches are on this same wall. There is always a click when I turn these on. I haven't worried about it and haven't had any issues. There were some times I thought someone was unlocking my front door. I really think it's just the fridge as its right by the front passenger seat. They all make noises.
