Make sure your coach battery terminals are tight snd clean. Use a volt meter to test the charging and resting voltage. See if the sound you hear is the same as when you push the emergency start switch. If so, that could be a solenoid going bad, battery is bad or something could be accidentally engaging that switch, depending where its located.
You mentioned fridge. Illuminate it, shut it off when driving and see if you still hear clicking. If not , then its the fridge trying to relight while running on LP.
If thats the case, i’ll give you a simple fix that often helps. Cover the bottom vent portion using duck-tape on the outside access panel of the fridge. That redirects wind turbulence from an awning arm.
