Convection Ovens
Can I install a household type convection oven in my coach or will the bouncing of the rv be to hard on the oven?

If you get one that exhausts out the front you will not have to vent it thru the side of the rv, unless you already have an exterior vent anyway.
X2; buy a unit designed for over-the-range use. We replaced the standard Sharp that most RV's seem to come with, with a GE Profile. Much better temperature control and built in racks that make it possible to cook more than one dish at a time.
