I think in the small RV convections, they may not be as fast. We use the convection all the time in ours. If I let it preheat it takes almost 30 minutes, so I never preheat. I'll throw two large pieces of chicken on the metal rack at 375 for 40 minutes and they come out perfectly.
Here's a little secret. We bought a pair of those black BBQ mats that you cook your food on when BBQing. They sell them everywhere now, including Bed, Bath and Beyond. I took one and cut it down so that it was about a 1/2" larger in diameter than the round rack in our convection oven. When I cook steak, chicken, pork chops, etc, in the convection oven I put the meat on the mat atop the rack. The juices don't drip off and saturate the meat. I use the mats on my home BBQ and home convection. Give it a try, you'd be amazed.
