Most people rip out the dinette, replacing it with a couch.
Like you, we value the dinette much more than a couch. A few things learned with our dinette.
1) The cushions should be smooth leather and have thinner memory foam, not cloth with thicker standard foam. The leather allows for easy sliding in and out, and the more dense memory foam is actually more comfortable to sit on for long periods of time, and will not deform like cloth with standard foam. The thinner foam also provides more room between you and the table.
2) Use the latest table hanger design that attaches and pivots off the wall on one side, with a single leg on the other side that swings up and clips to the underside of the table when converting into a bed. This is not only easier to convert, but it offers much more leg room compared to what we have in our rig as seen by
