Hey "lunch surfer" have you ever ridden AZ Forestry Road 300. It goes from Hwy 87 and 260 Junction near Payson across the Mongollon Rim to Heber/Overgaard Junction. A 2 day trip on Mtn Bike. But man the views can stretch it into 3 days so easily that you have to plan for that.
