(a) "perfectly level" is not necessary, but close to level is necessary for any absorption fridge.
(b) the leveling blocks are no big deal. I put a pair of levels on the front right corner of my TT that tell me exactly what to do. The one of the front wall tells me exactly how many inches I need to level left to right, and I get the required number of blocks out of the storage bag, shove them up against the tire(s) either fore or aft, and pull up/back up six or eight inches. Done. For the Sprinter rig, you'd also need to look at the level on the sidewall to see what you have to do fore and aft to get level that way. I have rarely ever needed to raise the tires more than a couple inches, and you probably won't either. It's only when you need to go 3 inches or more that things get "interesting."
