I'm not reading everything so I don't know if this has been mentioned or not. My recommendation is to go rent an RV. Get maybe a 28' foot class C and rent it for a two week trip and go spend two weeks in it. Then ask yourself if it was big enough or not. I actually did just that and decided it wasn't big enough so when I bought, I bought a 32' Class A gasser with a single slide. Two years later I traded that in on a 35' DP with three slides. I'm very happy with what we have, but when the wife joins me in retirement in a few years we'll probably upgrade to a 38' to 40' rig. The 35 footer served us well for 10 years now and it was plenty of room for our one and two week trips. But if I'm going to head out for a month or more at a time I want something a little bigger with a bit more storage.
One thing also, when you're looking at motorhomes sitting on a dealer lot, they always look like the would be plenty big enough for whatever you want to do. But when you fill that motorhome up with all your stuff and hit the road, then you find out it wasn't all that big afterall. And yes although some people down grade in size, I think most people that get different rigs go to a bigger one.
