I concur. Your inverter is fine and you have enough batteries. My only recomendstion would be to add a couple of 160 watt panels. We dry camp for weeks on end with a residential 22 cubic foot fridge. We have a large solar array which helps. Even before we switched to the residential we were in the habit of running our genny in the morning when we made breakfast for things like the microwave, toaster, coffee maker etc. We also run it for an hour at supper time. That seems to be enough to keep the batts up.
