Don't bother with the velcro - it won't hold. The sticky part either gets too hot or too cold and ends up falling down. Instead, use the small screw to attach it.
If you're going with battery lights, look for this one at Harbor Freight (doesn't have a remote but price is under $10): LED track light
I have it installed inside my floor to ceiling pantry cupboard and it really makes seeing into the cupboard easy. Each light can be angled.
If you don't put in more 12v lights now, I would at least run the wiring for more and tape them off. That way, you can easily add them later (instead of having to go through the new walls, etc.).
When you add outlets, I would add at least two 12v outlets (cigarette lighter style) and two 12v usb outlets (you can get a panel with the 12v and 2 usb outlets on amazon for $12) - one set near your bed and one set near your dinette or counter (wherever you're most likely to set your phone down).
