Closed up, parked in sunlight, my RV will get over 99F (highest reading on thermostat) within two hours, even on a cool (60-70F) day. One of my friends has a better thermometer in his, will see 120-140 F parked in full sunlight, which is somewhat cooler than a car, but still pretty hot for an animal.
Opening windows, and leaving the door open (screen door is largest ventilation opening) with Fantastic Fan running full speed, I can keep most of the interior no more than 5-10F above outside temperature. If it is 95F outside, that is still hot.
Whether or not the A/C can keep up with the heat load, depends on where you are, the sunlight, size of the A/C, and how well insulated the RV. My C, with a 15K BTU A/C, can keep the interior about 15-20 F cooler than the outside, in sunlight. That's about typical also for 28-30 foot rental units, smaller boxes with the same A/C will be cooler. So it depends on where you are going, 105F summer day on the Great Plains, still going to be about 85-90 inside until the sun goes down, unless you can park in shade.
More luxurious RVs this size, and larger RVs, more often have two or three air conditioners (travel coaches have as many as five), and if they can have power to run them, will keep up with most any heat load.
Safe to run the A/C on the generator? Yes, if the generator keeps running (they will shut down if out of fuel or oil, or get too hot) and doesn't put carbon monoxide into the coach. There is a chimney device sold to lift the generator exhaust higher, make it less likely to accumulate around and infiltrate into a parked coach.
