We leave our dog in the RV, just as we leave our dog at home, for a few hours at a time while we do something outside the house or RV.
First, we close a door that keeps the dog in the back of the RV. Otherwise, he will hop up in the front seats and push the door unlock button with his paws.
In the back, he lays on the couch, has access to food and water, and mostly sleeps. We close the blinds so he doesn't see things like squirrels to bark at. Some people turn on the radio to provide some entertainment.
We set the thermostat on our fantastic fan vent to turn on if the inside temp gets to around 80. With a white roof, heavily tinted windows (with blinds) and the fans blowing outside air into the coach, the temperature in the RV won't get any higher than the temp outside. Car people don't get this, and think any vehicle is a sauna. With vents open and fans blowing, the inside of the RV stays comfortable on any day we're likely to be camping. If it's 95-100 outside, I'm parking the RV and staying home.
Others do get upset (rightly so) if camped next to an unattended dog that barks constantly. If that describes your dog, you should consider another option.
