Assuming that is accurate, that is about 20-30 degrees too hot !

Again, assuming your gauge is accurate, that is late. The fan should be fully engaged by about 200-210 degrees.
There is a very
simple test you can do to test for blown head gasket.
My gut says the fan clutches is not working correctly.
