Depending on the part of NC, it usually does not stay freezing for long. So temps dipping into the 20's overnight will be in the 40's during the day. You should be fine with just running the heat and disconnecting from water overnight. Back in MD, I usually only encountered issues if it was going to be freezing for an extended period of time. If it got above freezing during the day I never bothered with winterizing.
