I think its doable. Obviously we're mostly going to be traveling with 3 and we love the ability of an RV to have a bathroom and space for the kids to stretch out a bit on longer trips.
I've been looking at a few Roadtreks. Two questions: 1) Does the bathroom in the Roadtreks drive you nuts? It just seems that they are an after thought and take a lot of maneuvering doors to get privacy versus some of the others like Leisure Way/etc.
2) The Roadtreks on the Chevy Chassis. Some of the ones I'm looking at are on the Chevy Chassis and have fairly high miles (120,000 or so). That worries me a bit compared to the Diesel engines where it wouldn't worry me a bit. Any thoughts on that?
I did find a 2008 Coach House Sprinter that I like a lot but it had 170,000 miles on the engine. Miles always stress me out even on diesel engines.
