Yes, reroute or adding stops is very easy and I've found it even easier to do so via the voice command. Can be frustrating with some names but it works like a champ.
Yes, to do so use some extra waypoints on the routing you want to keep to.
At first it will try to get you back on the planned route via various turn abouts. After a while though, depending on your inputted preferences and the conditions, it will reroute instead.
Remember to input your MH or RV specs into the unit. Low, narrow or traffic clearances depend on some of your settings to keep you out of trouble. The more accurate you are the more accurate it will be.

The auto-reroute is the one that some GPS are not very good at, like you say, it will try to bring you back to your offroute point. The one I have in the pickup truck just reroute to rejoin the planned route the shortest or quickest possible, but does not necessarly want you back to where you got lost.
I have a small old garmin that tries to bring me the shortest route, but this one is not very smart, it will take me to an old farmer route to take a short cut!
I use my Microsoft quite often too, but I disable the option "Provide navigation". I have the GPS add on detector and I just look where I am according to the colored planned route and follow the route with the GPS only. When I use the GPS as a navigation guided voice, it very quickly reroute me as soon as I deviate just a tiny bit or if it looses the satelite a little, or for some other reason, and it is very very anoying to hear the Reroute, wrong route, reroute, reroute, wrong route, give me a brake, I already have one wife!
