There is virtually no risk for the grey/black tank to back up as there is an alarm on the system. A lady's voice will come on saying something like 'holding tank is approaching full' and will not stop until you hit the 'disarm' button. The same lady (I've looked for her but she hides well).... will also say 'fresh water tank approaching empty'.
Personally, I like the one holding tank system as you can get more liquid in before it needs to be released vs. having two separate tanks.

Single RV holding tanks are not unusual, although not all that common either. One reason for using multiple tanks is design flexibility, and another is sanitary safety versus cost. An alarm system like the one on your Liberty is more costly than using separate tanks so that the likely full tank back up point, the shower/tub, is only exposed to grey water. I have my own coach set up so I can use it both ways, as either a pseudo-single tank system or a standard two tank setup as needed.
