How to check a thermistor in my Norcold

I pulled the thermistor and checked it's resistance. It shows an (OP)/open so it is bad.
Now to see if I can find one on a Sunday as I'm leaving tomorrow night. I don't know if the guy I talked to at the Camping World knows what he's talking about or not when he told me the nearest one was in Florida. I'm going to check a couple of other stores tomorrow. I would think a thermistor would be a stock item. We'll see I guess.
By disconnecting it, my temperature has dropped 10 degrees since this afternoon. It's 39 in there now and still dropping but the outside temperature has dropped to about 92 degrees. I'll keep a close eye on it to make sure things don't start freezing. I'm hoping it'll get to 38 and stop. The freezer is and has been -10 F all day.
