If I recall correctly, Zion is a short drive from Georgetown, UT, so you won't see much of an elevation change.
To reach Moab you will hit several high passes, one going north on the 15 and one going east on the 70. I last went to Moab several years ago for the Easter Jeep Safari (late March) and was very surprised to find and drive through heavy snow at the higher elevations on both freeways. I was not a problem at all, I just slowed down and took it easy. It was daytime, fresh snow and no ice. Would not want to have driven it that night! The fearless and more experienced truckers were whizzing by me going around 70+ !!
It will be cold ! Have fun.
