Indeed, we don't meet the median demographic for motorhomes. As was suggested above, most MH buyers probably eat out nearly all the time or microwave a prepared meal. Our microwave in the TT has never been used for anything except a bread box. We do our cooking on the stove top, oven, or outside on a charcoal grill. We usually sit by a campfire. We've never missed having a sofa or a TV when camping.
Yes, in the higher-end used MHs that we're looking at, Corian counters are pretty much standard, but the kitchens don't usually seem intended for any serious cooking. Our choices are pretty much limited to a used higher-end unit because we need something with dual pane windows and all the other necessities for winter camping off-grid and our budget won't allow for a new unit with the features we want/need.
FWIW, I've looked at dozens of MH's at dealers and at RV shows, and I've spent dozens, perhaps hundreds of hours, scanning floorplans in brochures on the internet, and photos on RVTrader.com, Ebay, etc. Those of you who have adequate counter space in a unit no more than 38’ or so are the exception rather than the rule.
For counter space something like the following is pretty typical, with many units having even less and a few units more. The counter space in the photo looks a bit bigger than what it is in reality because the stovetop cover is closed and one of the bowls of the sink is covered withe the Corian insert.
