A lot depends on the chosen platform for your adventure. If you want the Mercedes engine and capacity, you are limiting yourself to what most would say would be too small.
If you decide on the Ford or Chevy platform you can have your 5K towing capacity, but again there is trade offs if you go to long on the E450, then you use up too much carrying capacity.
Considering your intended purpose, you would want to spend somewhat more for a motorhome of a given length and should look for a premium brand.
You might like a dinette slideout (totally usable with the slide in), but I would avoid the bed slideout without a doubt.
I would also avoid any with a TV up high or in the middle of where a window should be. Sitting comfortably is important.
You should also consider buying something that others might like. Buying something unique means very few people might share your choices, and they become very hard to sell.
Have a look at mine to see if it might fit your answers. The shower might be too small, but the quality is certainly there.
