Move water heater switch
In our new RV the electric water heater switch is on the water heater..has anyone moved this switch inside? Seems to be quite inconvenient to have this switch outside on the heater itself.. I am think...

You still have to run the wire/s from wherever the hot lead is located in order to install a switch inside the MH.
Since you are going to run some wires anyway, (which you will have to) you might be better off looking at installing a three-way switch.
If the OP knew exactly where the hot lead is located at the precise location that he wants the switch installed, then what you've proposed is highly feasible.
