First thought is your back up thermistor is bad...the thermistor is nothing more than a thermostat. By disconnecting it the fridge simply continues to cool without ever shutting off. By nothing changing after replacement, tells me either your wiring is bad or the thermistor is bad or both. Verify you have voltage TO the thermistor. If yes, try another one. If no, trace the wiring to determine where the short is.....Dennis
BTW...you should be able to get those temps in those conditions with a 3 or 4 setting. I usually have mine set at 2-3 and the ice cream is solid.....Dennis
