My vent fan at home is a recirculating version, and I use my gas range a great deal, with no problems. No different than cooking on a RV range.
I don't think you need to be concerned about safety, since you are only using the range when you are up and about, with doors opening etc and possibly a window open. Your RV is NOT so airtight that you get zero fresh air.
A vent fan in a RV is good to help remove heat (as needed) and/or odors.
