I use my coach for photo ops too. In fact that is some of the driver on where we go. We can boondocks for 2 weeks without utilities if we are careful. If you have lots of kids that would go down a bunch but I think you could get a week if you are careful. The carrying capacity of my coach is huge. I have two full sized pass thru and can carry over 7K pounds extra after I am full of water and fuel. A DP will allow you to tow a bigger vehicle or tow the one you have easier. I might consider a stacker trailer. You would be able to fit the van and have some extra outside storage for stuff if you are full timing.
