In addition to the tires, your wheels have weight ratings that should not be exceeded. You have upgraded your tires but that has no effect if the rating of your wheels is being exceeded.
You mentioned FULL fresh water. Why are you traveling with full fresh water? My fresh water tank can weigh in excess of 550 pounds when full. I understand if you boonedock and need fresh water but perhaps it is best if you do most of your travel with very little water in the fresh water tank and then top it off closer to your destination.
