Two questions for the OP:

1: Have you had issues with the ground clearance of the Travato? I am worried about its low ride height, especially on some rutted roads I'm on.

2: Do you think it would work to have wheeled plastic chests stacked and piled up, then when at the campsite, pull them all out, chain them to the pedestal or an immovable object, and then flip the bed down? The flip-up bed is nice for storage flexibility.
