I have the Roadtrek 190 Popular, and it's great for one person, pretty good for two. The idea is to live out of it, more than in it. As a retiree, the OP may be able to schedule some of his travels for good weather, which minimizes the tight size problems that come with any Class B.
There are a couple of different configurations on the 190. Roadtrek has long had cabinets that can replace the 3rd and/or 4th seats; and, more recently, they also make a "permanent bathroom" model that replaces the 2nd row of captains chairs with a larger bathroom. That's what I have, and the trade-off works for me.
The front seats easily swivel to face backward, but the driver's seat occupant is pretty much pinned in by the table and passenger seat if in use. When we want somewhat separate spaces, one sits in the passenger seat & one is in the back on the electric sofa or adjacent seat.
RVs are all about trade-offs, and the ease of driving & parking a Class B outweigh the space constraints to me. If a Class B seems a bit too confined, there are a lot of Class Cs that are a bit bigger. Plenty of options.
