I don't want to post too much all at once, but these are exact questions I am thinking about too, so it is a great discussion. I qualify for retirement now with 30 years service myself, although can't afford it yet so we are in pre-retirement travel.
On the space and sanity, I know one person travel is very different than two person, and either way, making use of outdoor space (with comfortable chairs, van awning, maybe even a very small gas grill) gives you a great new amount of space. For inside, great working vent fan(s), screened windows, furnace and a/c keep the sanity. And I think if you get the planning down for your own preferences, you will find the space for those extras. The three you mention (guitar, telescope, fishing tackle) will all make the travel exceedingly better. When looking at the camper choices, think about the spaces needed least when driving, and then those spaces needed least when parked, and things start making sense. I had no idea about that until my model was in my driveway (after several trips learning!).
