Honestly you wont make a lot more power, probably on the order 20~30 with those mods and a different carb will likely cost you fuel efficiency.
I would instead spend it on a EFI system. I like the Holley because it uses a lot of non-specialized parts that you can buy off the shelf at any common auto parts store.
You'll get better gas mileage and about the same power increase. It wouldn't hurt to add the headers at that point.
