I just flip this switch off while gassing up and then turn it back on before starting down the road.
Shutting down the 12V power certainly does shut off DSI igniters and solenoid valves in the appliances that have those. It does nothing to stop non-electric appliances like the stovetop, (many) ovens, water heaters with pilots rather than DSI, etc. Obviously I don't know what specific appliances you have.
It may or may not shut down the flow of gas from the tank to the rest of the motorhome. If you have a solenoid shutoff valve for the tank, usually because it has a remote fill, then it would. Otherwise, it generally would not.
There are some setups with a separate safety shutoff valve connected to the propane detector, though I don't think that's too common anymore. Those would presumably shut off the flow of gas with 12V power shutoff if (and only if) the propane detector gets shut off with the rest of the 12V system--which may well not be the case.
It is safe to say that shutting all the appliances down does stop the flow of propane in the sense that there's no demand so there's no flow, just as shutting all the taps in the motorhome stops the flow of water from the campground connection even though the campground **** is still open, if that's what you were meaning.
