Don't know about the workhorse chassis. My Ford F53 is on a Southwind 30' coach has a 178" wheelbase. I have no complaints about the stock handling but I simply don't drive in high crosswinds to avoid the stability issue entirely and I don't expect too much. I'm always at least 1600 lbs. under max GVWR and I don't normally tow.
My next coach will probably be an F53 32' Class A gasser on a 208" wheelbase. Hopefully with optional 22.5" aluminum wheels. I suspect that it will be even better handling than current. The older anemic Chevy chassis used 16.5" wheels (19.5" on the Ford) which along with the considerably lower GVWR certainly wouldn't help handling issues.
