I don't know about Jerseydevil's RV, but I certainly can and have. I can also take a hot shower or get a half bucket of water to squeegee the windshield off. Enclosed tanks, a heated wet bay (via a little duct hose from the furnace), and plumbing runs within the insulated envelope of the RV make at least relatively moderate freezing temperatures a non-issue for water system operation. I would probably start having second thoughts if it gets too far below zero.
The most annoying parts for me are related to returning home: finding an open dump station, and having to re-winterize in the snow and cold and (sometimes) dark unless I want to keep the furnace running solely to keep the plumbing happy.
