Since my main concern with my Norcold is fire..........would running it on electricity only minimize the fire danger? My understanding is, that ammonia leaks out and if it's running on gas, the gas...

Actually it is. Thats why Norcold is installing over temp failsafe shutoff devices.
OP: make sure you have the current release failsafe, because the older ones had problems. Also install an auto release Halon extinguisher in the rear compartment. I have two: one above the fans, one below
