You may have a legal duty to inform a prospective buyer of such a modification since such a person may presume the belt is there. Other than that, the only "legal" issue you'd be likely to face would be in the presumably unlikely event that you had a young child in the RV with no means to provide a seat belt for him/her. That would get you a ticket in most states.
