When we snowbird heat is off, water is off, HW heater is drained and bypassed and RV antifreeze is pumped through the hot and cold water lines. Takes about 2 hours to winterize the house, and about 15 minutes to turn everything back on when we return. If you turn heat off, don't forget soda and water in the closet and products with a lot of water packed in jars and cans. They'll freeze and burst too, and a month or two old mess to clean up isn't pretty or fun to come home to.
Absolutely the worst thing you can do for your home is shut the heat off completely. The freeze and thaw will cause the drywall to crack not to mention moisture build up in your home. Shutting the water off is probably a good idea but I would never shut the heat off completely. Turn it down but don't shut it off.
