We purposely ordered our motorhome with only two slides and full-timed in it very comfortably for eight years. We enjoy public parks and stayed in them 90% of our time, along with boondocking on forest or BLM lands. Many of these places have trees and we didn't want to have to deal with placement of the motorhome within the staggered trees in order to be able to open the slides. We also wanted a big patio space. Both our slides were on the driver's side; one in the bedroom and another in the living room.
Opposing slides only gives you floor space and truthfully, is it really needed - unless you want to practice ballroom dancing!
Also, slides take up storage space in the basement and can be difficult getting under the slides to open bay days and find what you want - especially if you have a bad back. :) As full-timers, we wanted that space and wanted it easily accessible.
